Healthy Mushroom Sandwich is very easy to make and is a super quick recipe. Also, ingredient list for this recipe is minimal hence does not require much effort.
The Mushroom mixture can be used as stuffing for a sandwich/toast or as a vegetable along with chapati. It tastes yum. My husband loves mushroom and paneer and it was always hard for me to find a good easy vegetarian mushroom recipe online. So after trials and errors I came up with my own version. Ingredients (for 2 packets of button mushrooms):
Olive Oil: 2 tbspn
Onions: 2 medium sized
Capsicum: 1 medium sized
Black pepper: 1 tsp (adjust according to taste)
Red Chilli: 1 tsp ( again adjust acc to taste)
Garam Masala: 1/2 tsp (you can skip it too)
Pizza Pasta Sauce: 1+1/2 tbsp
Tomato Ketchup: 1tsp
Mushrooms: 2 packets chopped
Add olive oil to pan. Once it is hot add onions and saute till they turn transparent.
Add capsicums and again saute for 2 minutes. Add salt, black pepper,garam masala and red chilli.
Add both the sauces and saute well. Now add mushrooms.
Keep mushrooms on slow flame for good 10 minutes till they release all water and it evaporates.
Once water completely evaporates, nice dry mixture will be left behind and Mushrooms are ready.
